Share some of your favorite hot, comforting meals to help us all through the chilly seasons. Soups, stews, chowders, chilis, whatever you long for after an hour of shoveling your driveway!

Here's a hearty curry made with rough-diced pumpkin that's sure to raise your body temp!

Red Curry Beef and Pumpkin.

1lb ground chuck or sirloin (80-85/20-15)
1cup basmati rice
1 small pie pumpkin, large dice.
4 Shallots, chopped fine (Or 1/2 to a whole medium onion)
3 cloves garlic, minced.
1 1/2tbsp garam masala
1 1/2tbsp red curry paste (A Thai cooking ingredient.)
16oz tomato sauce
8oz coconut milk
4oz cream (Or plain yogurt)
salt/pepper t/t

Brown the beef, leaving it in medium sized pieces. Remove and hold. Sweat the shallots and garlic in the beef fat. Add the pumpkin and cook on medium low heat for 6-8 min, avoid browning the pumpkin or garlic. Add the tomato sauce, coconut milk, curry paste, and masala spice. Cover and simmer for 15-20 min, until the pumpkin is just tender. Return the beef to the pan and simmer to heat. Remove from heat, and add cream or yogurt. Serve over basmati rice.

(Tips for disassembling your pumpkin: Remove the top of the pumpkin as you would if preparing to carve a Jack-O-Lantern. Repeat with the bottom of the pumpkin. Slice the pumpkin into manageable wedges, scrape off seeds/strings, then use a vegetable peeler to remove the rind. Cut into large-ish chunks.)[/img]

`Ah I like Thai food. But not sure how I feel about the pumpkin.

When it's chili I like to eat/make soup. Whether it be Chicken and Dumplings, Chili, Potato Soup with scallions, bacon, and parm for garnish, etc.

Just good comfort food like Meatloaf with mac n cheese, and green beans. Or a deep dish Pot Pie. Mmmmmm

`Yeah, oh a cold night I like a homemade soup, like Clam Chowder or Chicken Noodle.
Alot of times I end up making fried chicken with mac and cheese or something with a sh*t ton of gravey!!!! yum
